It's a problem that I can eat a whole pan of scalloped potatos. When I cook for my family, I serve it in the "one serving for me, two for you" way. My plate is always bigger than that of my children. Let's not talk about those times when I have a craving for scalloped potato and no one's around -- I won't use a dish. I'm sorry, but it was bad.
It was for this reason that I developed this recipe. The traditional recipes for scalloped potato are heavy, and, let's face it, they may not be the best for you, if you eat them as much as I do. This recipe uses avocado oil instead of butter and unsweetened milk. While it's not an invitation to make a lot of scalloped potato, you can feel better about serving it to your family. You.

Bake
Layer the pre-baked potatoes and cream sauce in a baking dish. Top with a layer of cream sauce. Cover and bake 10 minutes. Remove the cover and continue baking for 5 more minutes. Rest for 10 minutes. Garnish the dish with fresh herbs.
Variations
This recipe is very flexible. You can add, subtract, or change the proportions to suit your taste. Be aware that this could make them less healthy. Here are a few ideas:
Cheese-Scalloped Potatoes : This is an obvious addition as people think of cheese when they picture scalloped potato. Add shredded cheese to the potatoes, then top with more and broil for a gooey topping.
